new designer question

i think this is a silly/obvious question, but im going to ask anyways. :)
i am doing stuff like greeting cards and graphics heavy stuff with photgraphs in photoshop and illustrator-what pantone library should i use? coated, uncoated, process, color bridge, etc??? the pieces will be printed on either glossy or semi-matte card stock.
also, rgb or cmyk? im going to be sending the stuff to be printed at digital pro photo labs.
